Ash Gourd peel chutney

I made this Ash Gourd peel chutney for the first time and I totally loved it.Β And it went well with my dosa. They paired very well πŸ˜€Β 

This vegetable is also well known by other names such as winter melon / white pumpkin.And it comes with lot of health benefits as well- Ash gourd’s low calorie, high fiber, and high water contents may help improve your digestion and promote a healthy body weight. Β 

I am very picky when it comes to chutneys, and I loved the flavor of this. Do give it a try, you would definitely love it πŸ˜€

You can also have this as thogayal, by simply not adding water while grinding and making it dry. It could be paired with hot steamed rice and ghee. Tastes heaven πŸ˜€

Ash Gourd peel chutney

Healthy chutney out of Ash gourd's peel which can be easily whipped

Ingredients

  • 1 cup Ash gourd peel
  • 1 tsp oil
  • 1 tsp urad dal
  • 1 tsp channa dal
  • 2 red chillies
  • 1/2 tsp hing
  • 4 tbsp grated coconut
  • 1/2 tsp turmeric powder
  • 1/2 tsp jaggery
  • 3-4 tbsp water to grind See Notes
  • salt

Instructions
 

  • In a pan, boil 1 cup of water with 1 cup of Ash Gourd peel for 5-6 mins until the peel becomes soft.
  • In parallel, in a tempering pan, add 1 tsp oil, 1 tsp urad dal, 1 tsp channa dal, 2 red chillies, 1/2 tsp hing and roast the spices well.
  • In a mixer, add 4 tbsp of grated coconut, 1/4 tsp turmeric powder, 1/2 tsp jaggery, boiled peels, roasted spices, salt, 3-4 tbsp of water and give it a stir.
  • It is done.

Notes

  1. You can skip adding water and grind it dry - to make it a thogayal - and can have it along with hot white rice and ghee. It tastes delicious.
