Aloo Saag
Curry made out of potatoes and fresh spinach leaves

- 2 Potatoes cubed
- 5 tbsp spinach chopped fine
- 1 tsp oil
- 1 tsp mustard
- 1 tsp cumin
- 1 tsp garlic chopped fine
- 1 tsp ginger chopped fine
- 1 green chilli slit
- 1 onion medium sized, chopped
- 1/4 tsp turmeric powder
- salt
Boil the potatoes ( You can pressure cook the potatoes with 2 cups water for 2 whistles or you can boil them in boiling water for 10 mins )
Temper 1 tsp oil, 1 tsp mustard seeds, 1 tsp cumin, 1 tsp chopped garlic, 1 tsp chopped ginger, 1 slit green chilli and saute them well.
Next add 1 chopped onion and fry till they are translucent
Add 1/4 tsp turmeric powder, salt and mix them well.
Then add the boiled potatoes and fry for 2 mins in medium flame.
Next add finely chopped 5 tbsp spinach and cook it for 5 mins in medium-low flame. It was done.
