Made out of fresh ground spices, this is definitely my favorite sambar. It takes some time to prepare this dish but totally worth the effort ! 🙂

Arachuvita Sambar
Lip Smacking sambar made out of fresh spices.

Ingredients
For Ground Spices Mix
- 1 tsp oil
- 2 tbsp corainder seeds
- 2 red chillies
- 1 tbsp channa dal
- 1 tbsp toor dal
- 1/3 tsp fenugreek seeds
- 2 tsp coconut
For Sambar
- 1 tsp oil
- 1 tsp mustard seeds
- 1 spring curry leaves
- 1/2 tsp hing
- 2 red chillies
- 10 shallots
- 2 tomatoes chopped
- 1/2 cup veggies your choice; pumpkin, potato tastes the best.
- 1/2 cup toor dal
- 2 tbsp tamrind extract Diluted tamrind extract
Instructions
Ground Mix
- In a pan, add 1 tsp of oil, and then roast 2 tbsp of corainder seeds, 2 red chillies, 1 tbsp channa dal, 1 tbsp toor daal, 1/3 tsp fenugreek seeds.
- At the end add 2 tsp coconut and mix.
- Let it cool and then grind the mix.
For Sambar
- Pressure cook 1/2 cup toor dal with 2.5 cups water for 5 whistles.
- Next in a pan or pressure cooker, temper 1 tsp oil, 1 tsp mustard seeds, 1 spring curry leaves,1/2 tsp hing, 2 red chillies.
- Then add 10 shallots and fry till it is translucent.
- Next add 2 chopped tomatoes, and the veggies (of your choice) and saute them for a min. I added 2 cubed potatoes in this batch.
- Next add the ground powder, cooked 1/2 cup toor dal, 2 tbsp tamrind extract , salt and allow them to boil for 10 mins. ( Alternatively you can also pressure cook them for 2 whistles )
- Garnish it with corainder leaves and it is done!
Notes
- Soak half-lemon sized tamrind in water and use the water extract.
- Try to use country veggies for this dish.
