Aloo Saag

Aloo Saag is a curry blended with the goodness of potatoes and spinach. It goes well with rotis, chapathis as well as any of variety rice. I have paired with tomato rice in the pic.

Aloo Saag

Curry made out of potatoes and fresh spinach leaves

Ingredients

  • 2 Potatoes cubed
  • 5 tbsp spinach chopped fine
  • 1 tsp oil
  • 1 tsp mustard
  • 1 tsp cumin
  • 1 tsp garlic chopped fine
  • 1 tsp ginger chopped fine
  • 1 green chilli slit
  • 1 onion medium sized, chopped
  • 1/4 tsp turmeric powder
  • salt

Instructions
 

  • Boil the potatoes ( You can pressure cook the potatoes with 2 cups water for 2 whistles or you can boil them in boiling water for 10 mins )
  • Temper 1 tsp oil, 1 tsp mustard seeds, 1 tsp cumin, 1 tsp chopped garlic, 1 tsp chopped ginger, 1 slit green chilli and saute them well.
  •  Next add 1 chopped onion and fry till they are translucent
  • Add 1/4 tsp turmeric powder, salt and mix them well.
  • Then add the boiled potatoes and fry for 2 mins in medium flame.
  • Next add finely chopped 5 tbsp spinach and cook it for 5 mins in medium-low flame. It was done.
