I don’t get green brinjals easily here in Singapore, and this week managed to grab a few and made this delicious stuffed gravy 🙂
I remember tasting it in an Andra mess, where I used to have lunch most of the times while working in Bangalore.Â
This goes well with rice / chapathis and is very easy to make. I made it less spicy and it brought out the other flavors of the dish very well.

Stuffed Brinjal Gravy
An easy, delicious stuffed brinjal gravy.

Ingredients
For Stuffing
- 1 tbsp peanut
- 1/2 tsp cumin
- 1/2 tsp coriander seeds
- 1/4 tsp fenugreek
- 1/2 tsp chilli powder
- 1 tsp garam masala
- 1/4 tsp turmeric powder
- salt
For Gravy
- 6 small brinjal green or purple
- 1 onion medium sized; chopped
- 2 garlic cloves
- 1 inch ginger
- 1 tomato medium sized
- 2 tbsp oil
- 1 tsp cumin
- 1/2 tsp hing
Instructions
Stuffed Masala
- In a pan, fry 1 tbsp peanut until they become roasted.
- Next add 1/2 tsp cumin, 1/2 tsp corainder seeds, 1/4 tsp fenugreek and roast in low flame.
- Let it cool, and then add 1/2 tsp chilli powder, 1 tsp garam masala, 1/4 tsp turmeric powder, salt.

- Grind this mix into fine powder.

Gravy
- Slit open the brinjal and add the stuffing inside it.

- In a pan, add 2 tbsp oil, 1 tsp cumin, 1/2 tsp hing

- Add the stuffed brinjal, remaining masala and roast it well in low flame for 10 mins.

- Once roasted, keep them aside.

- In the same pan, add 1 chopped onions and fry them well.

- Blend 2 garlic cloves, 1 inch ginger, 1 tomato and add the paste. Mix it well and add required salt.

- Cook for 2-3 mins and then add the roasted brinjal.

- Add 1/4 cup water, close and cook it in low flame for 10-15mins until the brinjals are cooked. It is done.

Notes
- You can add more chilli powder if you want it to be spicy.
